Good Morning! We are on the last day of January and I seriously can’t believe it! This month flew by and I just want to hold on for dear life! Just kidding of course I’m looking forward to what February has to offer but seriously if time can slow down just a little bit I wouldn’t mind. 🙂  Today on the blog I’m going to be sharing a super easy and festive Valentine’s Day brunch for your special someone! Or you could totally do this for yourself because I have on one or more occasions. 🙂

PANCAKES

NEED: PANCAKE MIX, HEART SHAPED COOKIE CUTTER, 
SPRINKLES, STRAWBERRIES, SYRUP

These pancakes were so good but honestly, I didn’t do anything special besides add sprinkles! All you need is a heart shaped cookie cutter, some pancake mix (whatever one you have at home will do), and of course the sprinkles.  I made the batter from the instructions on the box, sprayed the cookie cutter with non-stick spray and placed it on the hot skillet, then added the batter to inside the cookie cutter. When the pancake is ready to be flipped, I added sprinkles to the uncooked side.

To top it all off, I added strawberries, syrup, and of course more sprinkles.

STRAWBERRY LEMONADE MIMOSA

NEED: MINUTE MAID STRAWBERRY LEMONADE (OR ANY),
CHAMPAGNE, SUGAR, RED FOOD COLORING, SPRINKLES

Nothing screams Valentine’s Day like a pink mimosa! Last year, I made raspberry sherbet mimosas and they were so yummy! This year I decided to do something different and these were just as good. 

The first thing I did was take some sugar and one drop of red food coloring and mix them together in a cup.  Once the sugar was red, I spread it on a plate and added the sprinkles.  Taking the champagne glasses, I wet the rim of the glass a bit with water.  Then taking the glass upside down, I just placed it on top of the sugar and sprinkles mix and just kept rotating. I love the way they turned out!

You can make it more juice than champagne or more champagne than juice, I totally won’t judge. Lastly, I added a strawberry as garnish!
