Welcome May! I can’t believe we are already 5 months into the year! With all the ideas I have for this month, I need to hit the ground running and get on top of my schedule. One of the things that I am most excited for is Cinco de Mayo! It’s such a fun and festive holiday and what better way to celebrate than by enjoying the culture! Today I will be sharing a Cinco de Mayo inspired outfit and a delicious and easy guacamole recipe that you can make to celebrate!
Cinco de Mayo Outfit
First I thought a fun tassel or pomp pom top would do. I came across this palm leaf and floral top and I knew it was the one. I paired it with some white jeans and these super cute sandals I shared with you guys on my Instagram stories a couple weeks ago.
They matched perfectly and helped make those flowers on the top pop! The top is a cold shoulder peplum with bell sleeves. Seriously it’s one of my cutest tops and I can see wearing this all summer long! For accessories, I just wore these super fun neon yellow and coral drop earrings, paired with this cute cognac bag. For a dressier look you could add heels. I’ll link the entire look down below!
Guacamole Recipe
I can’t take all the credit for this recipe because I learned it from my dad. When I was a kid I hated eggs. My dad on the other hand couldn’t get enough of them and wanted us to feel the same way. (At least that’s what I thought.) Every time my mom had to go run errands and my dad was in charge I knew my breakfast & lunch would consist of eggs. #littlekidproblems
Who would have known that I would grow to like eggs. (Thanks dad!) You will definitely need eggs for this recipe. I call it the secret ingredient. It will take you about 5 minutes or less. Big plus is that it’s Whole 30 approved!
YOU WILL NEED:
-Boiled Eggs (2)
-Limes (2)
-2 Small Avocados or 1 Large Avocado
-Sea Salt
-Tortilla Chips
Step 1: Boil your eggs.
Step 2: Cut your avocados in half. Remove the pit and scoop out the avocado into a mixing bowl.
Step 3: Peel your boiled eggs. Put them in the mixing bowl and begin to mash up the eggs and the avocados.
Step 4: Cut your limes in half. Add lime juice. I used half of one for decoration.
Step 5: Depending on your taste, add the amount of salt you feel is best. (If you get salty chips, I usually try to add a light amount of salt.) I used about 3-4 shakes for my mixture.
Step 6: Enjoy!
